This type of smoking, where a bowl of water is mounted over the charcoal heat source, originated in the southern states of the USA. The smoky flavour comes from burning wood chunks on top of the charcoal. The food cooks in a smoky steamy atmosphere, and is consequently incredibly succulent.
The ProQ is available in three models, and can also be used as a traditional barbecue.
