| Flavour and appearance are the most important factors for successful food smoking. The choice of the right smoking material contributes decisively to the quality of the end product. Furthermore, a source of danger is to be found in the wrong choice of material. Many waste wood chippings contain toxic or carcinogenic substances from glues, preservatives or pesticides. A further source of error is the use of smoking material that is too fine or moist resulting in a biting, bluish smoke with increased tar content. As well as home made smokers our 'Fine' Grade wood dust is ideal for use in box type type smokers such as the Snowbee or Camerons Smoker. In fact from our warehouse, we pack and supply the wood dust sold with the Snowbee smoker. The Kamado Joe, and ProQ water smokers, where the wood is placed directly on top of the charcoal, require large wood chips. Placing coarse or fine grade dust onto charcoal is not recommended as the dust will be rapidly consumed. |
