Flavour and appearance are the most important factors for successful food smoking. The choice of the right smoking material contributes decisively to the quality of the end product. Furthermore, a source of danger is to be found in the wrong choice of material. Many waste wood chippings contain toxic or carcinogenic substances from glues, preservatives or pesticides. A further source of error is the use of smoking material that is too fine or moist resulting in a biting, bluish smoke with increased tar content.

As well as home made smokers our 'Fine' Grade wood dust is ideal for use in box type type smokers such as the Snowbee or Camerons Smoker. In fact from our warehouse, we pack and supply the wood dust sold with the Snowbee smoker.

The Kamado Joe, and ProQ water smokers, where the wood is placed directly on top of the charcoal, require large wood chips. Placing coarse or fine grade dust onto charcoal is not recommended as the dust will be rapidly consumed.  

"Large wood chips are intended for use on top of charcoal . They provide the smoky barbecue flavour in equipment such as the Kamado Joe and Pro Q Barbecue Smokers. In this type of equipment, where the temperature at the face of the charcoal layer is extremely high, fine wood chips or even smoking dust would be rapidly consumed. Burning them in this way would be an expensive and fruitless exercise.

We only recommend natural lump charcoal as a heat source.  Unlike briquettes that contain chemicals and fillers, natural lump charcoal lets the true flavour of your food come through. 

To be frank, it is unlikely that you will want to buy charcoal from us as its obviously widely available throughout the country. However, if you are visiting us in Devon, we do carry a small stock of locally produced lump wood charcoal available for collection from our warehouse.
