Cold Smoking
- The food is smoked without heat - think smoked cheese, bacon, and cold smoked salmon and trout.

Hot Smoking - The food is cooked and smoked at the same time. Think smoked chicken, smoked eel, smoked mackerel and hot smoked salmon.
